Buttermilk Pancake Mix - 5 lb.

Wheat Flour, Corn Flour, Rye Flour, Dextrose, Powdered Buttermilk, Calcium Phosphate, Bicarbonate of Soda and Salt.
PANCAKES: Preheat griddle while preparing batter. Electric griddles should be set 400°F. Griddle is ready when a small drop of water dances on it before evaporating. Mix one cup of pancake mix and 3/4 cup of cold water. Stir with wire whip or beater until batter is smooth. Pour batter onto hot, lightly greased griddle. Turn pancakes when tops are covered with bubbles and edges look dry. Turn only once. One cup of Russell's Pancake Mix makes six average (5 inch) pancakes.
WAFFLES: Preheat waffle iron. Mix one cup of pancake mix, one egg, 3/4 cup of milk, and one tablespoon of melted or liquid shortening. Bake until steaming stops. This makes three average waffles.
CREPES: Preheat griddle 350-375°F. Mix one cup pancake mix, 1-1/3 cups milk, 3 eggs, and one tablespoon of melted or liquid shortening. Cook until edges begin to curl then flip immediately.
